This recipe is a really easy meal idea that looks much fancier and more impressive than the amount of work required to make it. It requires just a few ingredients and can be prepared with almost any kind of sweet potatoes.
The name Hasselback comes from a restaurant in Stockholm, Sweden, named Hasselbacken, where the recipe for Hasselback potatoes was first developed by Leif Elisson in the 1950s. Make even thin slits through the sweet potato (or other vegetables) between two chopsticks or wooden spoons while leaving the bottom intact, and you’ll have a beautiful, fan-shaped sweet potato that makes any meal more fun and festive.

Purple sweet potatoes are fun to cook with and can be used in many of the same ways as the regular sweet potatoes. They add a fantastic pop of colour to food and are high in Vitamin C, potassium, fiber, flavanoids and anthocyanins, which are powerful antioxidants and have been linked to reducing dementia and maintaining brain health. The violet hue comes from anthocyanins, the same pigment that gives red wine, berries, purple carrots & cabbage, and other vegetables their colour.
Purple sweet potatoes have a rich, creamy texture. They are denser and more floury than regular sweet potatoes, which is why you need to cook them longer than you would a regular sweet potato (from 1 1/2 to 2 hours at 180C/350F). They are so easy to prepare, but not so easy to find and will cost a little more.

Frankfurt green sauce / Frankfurter Grüne Soße from Germany is a creamy blend of fresh herbs, yogurt, sour cream, and oil that is usually served cold with hard-boiled eggs, boiled potatoes (great with roasted potatoes too) or meat. Traditionally it is made of seven different kinds of herbs: borage / Borretsch, chervil / Kerbel, cress / Kresse, parsley / Petersilie, salad burnet / Pimpinelle, sorrel / Sauerampfer and chives / Schnittlauch. I simply used a mixture of fresh herbs and greens, so put together your own mixture if you cannot find all the taditional herbs.
This healthy combination of seven tasty and finely balanced herbs was one of Johann Wolfgang von Goethe's favourites. A famous myth is that this sauce was invented by his mother. Actually, the first green sauce recipe was published in 1860 in a cookbook by Wilhelmine Rührig.
This distinctive green sauce is a perfect bold partner for those roasted purple potato wedges. This recipe will probably make more green sauce than you need but it is delicious on many things, such as toasted sourdough bread, roasted carrots, pumpkins or bbq chicken.

A farl in Gaelic literally means "fourths". They are shaped into a circle of dough and then cut into quarters, and here refers to a quarter of a flatbread, which is more commonly pan-fried, made from mashed potatoes and spelt flour. Traditionally they were made with oatmeal, that would result a coaser substance and nuttier flavour, butter and potatoes – no flour, no leavening agents. The less flour and raising agent you use, the denser and moister the farl. Using more flour, and raising agents (baking powder and baking soda) and moistening the mixture with milk creates an wonderfully light and fluffy bread-like texture.
These baked quarters can be made with leftover mashed potatoes too. Potato farls are most often served as the breakfast or at teatime. But you can absolutely enjoy these with soups or salads as a lunch. Leave out the onions, rosemary and black pepper if you want to serve them with a dollop of homemade jam. Experiment with different herbs and spices, like chives, dills, spring onions, cumin, or caraway.

Potato and Egg Salad with Pesto

This quick pesto potato salad with eggs actually makes a complete meal. It's quick, simple, but very delicious and satisfying. It is a salad that can be done throughout the entire year! Prepare it the night before, the flavours will have time to be mingled together. Sprinkle some crispy bacon bites over if you desired.

SaladAlmond Pesto
  • 650 g Baby potatoes
  • 4 Medium eggs, at room temperature
  • 50 g Arugula or other baby greens
  • Dill or herb of your choice
  • 150 g Vine-ripened cherry tomatoes
  • 1 bunch Basil, leaves picked
  • 30 g Arugula or parsley
  • 2-3 Garlic cloves, crushed
  • 30 g Grated parmesan
  • 100 g Roasted almond flakes
  • 2 tsp Lemon zest, plus juice of 1 lemon
  • 1 tsp Smoked paprika
  • 120 ml Extra virgin olive oil
  1. For the pesto, place all ingredients in a food processor and whiz until smooth. Season and set aside.
  2. Place potatoes in a saucepan of cold salted water. Place over medium-high heat and bring to a simmer. Cook for 15-20 minutes until fork tender. Drain and set aside to cool completely, then halve.
  3. Bring a saucepan of water to the boil over medium-high heat. Cook eggs for 7 minutes for hard-boiled or cooked to your liking. Drain and run under cold water.
  4. Place potatoes in a bowl with half the pesto and toss to combine. Add the arugula leaves, dill or herb of your choice and tomatoes.
  5. Peel the eggs and halve. Place on top of the salad and serve with extra pesto.

Sweet Potato & Carrot Soup with Peanut Crunch

This silky smooth, super versatile vegetarian soup is perfect for the fall and winter months. It's naturally gluten-free and quick and easy to make. The crunchy garam masala peanut topping makes it over-the-top delicious! It can also be frozen for future lunches and dinners. If you need it dairy-free, just use thick coconut cream (without the coconut water) and a teaspoon of lemon juice instead of crème fraîche.

Peanut CrunchSoup
  • 2 tbsp Honey or maple syrup
  • 1 tbsp Sesame oil
  • 2 tsp Garam masala
  • 1 tsp Tomato paste
  • 100 g Unsalted roasted peanuts
  • Sea salt
  • Rosemary, chopped
  • 2 tbsp Olive oil
  • 1 Onion, finely chopped
  • 150 g Carrots, peeled and chopped
  • 3 cm Fresh ginger root, finely chopped
  • 2 Garlic cloves, crushed
  • 1/2 tsp Dried red chilli flakes
  • 500 g Sweet potatoes, peeled and cubed
  • Salt and black pepper
  • 800 ml Vegetable stock
  • 100 ml Crème fraîche
  1. Preheat the oven to 180C/350F. To prepare the peanut crunch, mix honey, oil, garam masala, tomato paste and peanuts together. Spread on a baking tray lined with parchment paper. Season. Bake in the mddle of hot oven for 12 minutes. Remove and sprinkle the chopped rosemary over. Set aside to cool.
  2. Heat the olive oil in a large saucepan over a medium-high heat. Add the onion and carrots and cook until softened. Stir in the ginger, garlic and chilli flakes and fry for 2–3 minutes, or until fragrant.
  3. Stir in the cubed sweet potatoes and stock. Turn up the heat and bring the pan to the boil. Reduce the heat to low and simmer with the lid on for 20 minutes, or until the sweet potato is tender.
  4. Use a stick blender to process until smooth. Alternatively, tip it into a food processor and blend. Stir in crème fraîche. Taste and season.
  5. Serve in bowls topped with peanut crisp and a good grinding of black pepper.
